Recipe: Simple Fried Pork Chops

It was cold and rainy and I needed a quick meal. I wanted comfort food. I wanted it quickly. I wanted it to warm our bellies.

Naturally I went to one of my very favorite recipe blogs – Pioneer Woman for a recipe to meet my needs.

I searched “Main Courses” and found a recipe for Simple Pan-Fried Pork Chops.

She even starts the recipe with “It’s what Tuesdays were made for”. I love it – and it’s Tuesday!

7 to 8 breakfast chops (very thin bone-in pork chops)
1 cup all-purpose flour
2 teaspoons seasoned salt
cayenne pepper to taste
1 teaspoon black pepper
extra salt and pepper
1/2 cup canola oil
2 tablespoons butter

Directions:
Rinse pork chops.
Salt and pepper both sides of the pork chops.
Combine all dry ingredients. Dredge each side of the pork chops in the flour mixture, then set aside on a plate.

Heat canola oil over medium to medium-high heat. Add butter. When butter is melted and butter/oil mixture is hot, cook 3 pork chops at a time, 2 to 3 minutes on the first side; 1 to 2 minutes on the other side. (Make sure no pink juices remain.)

Pan-fry until Pork browns nicely and is cooked through

Remove to a plate and repeat with remaining porch chops.

Delicious and simple! Serve with smashed new potatoes.

P.S. Check out the original recipe for really great photos of the pork chops. I didn’t do them justice although they tasted terrific.
